Casting has been a key for HBO’s films, so its natural that they further celebrate the art in a new documentary “Casting By” (HBO, 9 p.m.), talking to directors from Martin Scorsese and Robert De Niro to Woody Allen and Woody Allen in bringing new faces to the screen, especially during the rich time of American film in the 70s.
Marion Doughtery, pictured, is hailed as one of the first who worked outside of the studio star system to help identify actors that included Glenn Close, Robert Duvall, Christopher Walken, James Dean, Warren Beatty and Redford. Lynn Stalmaster is identified as her counterpart in Hollywood as the star system collapsed.
What will poor Desiree Hartsock do now? This only made Des want him more and as we left her, she was weeping over him, and rejecting the other two guys on hand, Chris and Drew. Will she find a way to choose one of them? Host Chris Harrison will likely amp up the drama, calling this the most something ever on the show. Then they’ll add an additional hour, “After the Final Rose” (ABC, 10 p.m.), to talk about it.
Shark Week continues with a fascination for the film “Jaws” as the MythBusters team tries to recreate the movie’s mechanical model on “Sharkzilla: Sharktweeto” (Discovery, 8 p.m.), followed by a look at Cape Cod sharks in “Return of Jaws” (Discovery, 9 p.m.) and “Voodoo Sharks” (Discovery 10 p.m.) in Louisiana.
The behind the scenes crew from “Parks & Recreation” are interviewed on this week’s edition of “The Writers’ Room” (Sundance, 10 p.m.).
Most hip hop, it seems, comes to TV through reality TV. That continues tonight when a new show “Marrying the Game” (VH1, 9:30 p.m.) follows the rapper the Game and his girlfriend, a fifth grade teacher. It follows a fourth season return for “T.I. & Tiny: The Family Hustle” (VH1, 9 p.m.).
A panorama of unhealthy but tasty food at state fairs and carnivals is featured in the new “Deep Fried Masters” (Destination America, 10 p.m.), stopping first with a deep fried macaroni shop in North Carolina.

A fight at a party marks the eighth season finale of “The Real Housewives of Orange County” (Bravo, 9 p.m.)
Doris Roberts, Tim Conway and Marion Ross star in guest star as residents in a senior citizen complex who get involved in a murder investigation on a new “Major Crimes” (TNT, 9 p.m.).
