Like her best work, in “Heart of a Dog” (HBO, 9 p.m.), she presents hypnotic, delightful little tales that add up to more profound thoughts, set to slow-moving, ghostly visuals. It’s a remarkable art project posing as a personal documentary, the third consecutive night of striking premieres on the network, following those of Beyonce and Melisandre.
When it comes to turning the Revolutionary War into a spy caper, “Turn: Washington’s Spies” (AMC, 10 p.m.) has found its man in Benedict Arnold, prominently featured in the third season premiere, in the time slot where “Better Call Saul” ended its season last week.
