Historians and ex-generals from biographer Ron Chernow to retired Gen. David Petraeus help tell the tale, fleshed out by actors, with Justin Salinger playing the general. The first part ends in the bloody battle of Shiloh.

The new limited series “Barkskins” (National Geographic, 9 p.m.) concerns the intersection of French settlers, the Iroquois Nation and the Hudson Bay Company in the 17th Century North America. Based on the Annie Proulx novel of the same name, the eight-part series has a lot of interesting characters and a cast that includes David Thewlis, Marcia Gay Harden. The first two episodes run tonight.

The Safdie brothers’ “Uncut Gems” (Netflix, streaming) with Adam Sandler as a gambling jeweler, makes its streaming service debut.

Climate change and tourism is changing the cultural heritage of Easter Island, as reflected in the documentary “Eating Up Easter” making its debut on “Independent Lens” (PBS, 10 p.m., check local listings).

There are two timely new series about our current malady, “Covid: Our Lockdown in Shanghai” (Smithsonian, 9 p.m.) and “America’s Hidden Stories: Pandemic 1918” (Smithsonian, 10 p.m.).

As if to answer the spate of bad self-done cuts, the new series, “To Catch a Beautician” (VH1, 9 and 9:30 p.m.) in which Tamar Braxton and hairstylist Johnny Wright help customers right their haircut wrongs.

A second season starts for another one of those challenge TV shows, “The Titan Games” (NBC, 8 p.m.).

Dani Montalvo takes the title role in “I Was Lorena Bobbitt” (Lifetime, 8 p.m.), a dramatization of the infamous domestic slicing incident with the subject serving as narrator.

The two hour “Jeffrey Dammer: Mind of a Monster” (Investigation Discovery, 9 p.m.) is taken from extensive police interviews after his arrest.

“Below Deck Sailing Yacht” (Bravo, 9 p.m.) conducts a drug search.

Natalie continues to defy her parents on “The Baker and the Beauty” (ABC, 10 p.m.).

“Songland” (NBC, 10 p.m.) has Boyz II Men looking for a hit to record. It’s been a while.

There’s a Memorial Day edition of “The Food That Built America” (History, 3 p.m.).

The four remaining campers on “Bakeaway Camp with Martha Stewart” (Food, 9 p.m.) make breakfast.

On “Amy Schumer Learns to Cook” (Food, 10 p.m.), they make brunch during the quarantine.

It’s singles weekend on “Camp Getaway” (Bravo, 10 p.m.).

Turner Classic Movies’ Memorial Day Marathon winds up with “Battle Cry” (6 a.m.), “Where Eagles Dare” (8:30 a.m.), “The Great Escape” (11:15 a.m.), “The Dirty Dozen” (2:15 p.m.), “Battle of the Bulge” (5 p.m.), “The Best Years of Our Lives” (8 p.m.), “Till the End of Time” (10:15 p.m.), “Coming Home” (1 a.m.) and “Homecoming” (3:30 a.m.).

NASCR runs its Alsco 300 (Fox Sports 1, 7:30 p.m.) with no fans.
