Tony Hawk turns 54 next month, but the skateboarding pioneer is still active in the sport, 40 years after turning pro. He considers his life in the documentary “Tony Hawk: Until the Wheels Fall Off” (HBO, 9 p.m.). 

Ken Burns’ two-night “Benjamin Franklin” (PBS, 8 p.m.) concludes with his work on helping craft the Declaration of Independence, secure French support of the American Revolution, and draft the Constitution.

Another two-night, four-hour documentary begins about Boston’s history of organized crime since 1950. “Bloody Boston: A Mob is Born” (Reelz, 9 p.m.) tells the story of Whitey Burger and the Irish Gang War. It concludes next week. 

The new series “Big Restaurant Bet” (Food, 10 p.m.) has chef Geoffrey Zakarian looking to invest $250,000 in one of eight chefs who try out for a new restaurant.

The animated children’s series “The Croods: Family Tree” (Hulu, Peacock, streaming) starts a second season.

On “This is Us” (NBC, 9 p.m.) the anniversary barbecue of Rebecca and Miguel goes awry.

“Name That Tune” (Fox, 9 p.m.) pits sitcom stars Frankie Muniz and Jodie Sweetin against Olympians Nastia Liken and Laurie Hernandez.
